Audur Ingolfsdottir is the manager at Icelandair Hotel Herad. Audur has over 30 years of experience in the hotel business, and has managed Hotel Herad for the past 11 years. She is a skier and believes that the best ski slopes are in East Iceland both in Stafdalur and Oddskard. Her favourite place is Mjoifjordur – a peaceful location with 18 inhabitants who mostly live off the land, taking advantage of what nature provides them. Audur has a little boat with an outboard motor that she sails out to sea to go fishing. She says that Bjolfur, a very high mountain situated directly across from the nearby village of Seydisfjordur, is the best-kept secret in the area. The view from Bjolfur is unbelievable, as you feel as if you are looking across the whole country.
Audur loves good food from all around the world but her favourite is Icelandic wild game. At Hotel Herad, she has put a special emphasis on the finest ingredients, especially reindeer and goose, from nearby locations. In the autumn she has help from professionals to pick mushrooms from the woods, which are then used in the hotel kitchen. Also available are fresh blueberry jam and crowberry jam along with Audur’s newest produce – syrup made from brambleberries, blueberries and crowberries, an ideal salad dressing.
